Many people simply love a dollop of honey on toast or even in tea, and many of us enjoy a teaspoon every so often.
Sometimes, however, we find that the honey seems to crystalize and taste gritty. While you may be tempted to discard the bottle, you can save it and even restore it to the way it was when you bought it.
Consider the container
It is recommended that you keep honey in the container you purchased it is because this is a correctly sealed container. Those cute little honey pots with tiny spoons, while looking so sweet, do not seal the honey.
Because honey contains little water bacteria does not grow easily. However, once we transfer it to another container, bacteria will start to grow.
As long as your honey is not exposed to the air (and the lid seals tightly) it should be fine.
Keeping your honey in plastic or metal containers is never recommended because this can cause the honey to oxidize.
Keep the honey at room temperature
Honey is best kept at room temperature between 64 – 75 degrees F. Old fashioned pantries are great for this.
Warmer temperatures will cause your honey to turn darker and the flavor may change.
Never refrigerate
If you do place your honey in the fridge, you will soon find that it turns into a semi-solid lump. The flavor will also change.
Final thoughts
If honey is kept at room temperature and is in a container that can seal, it should last and not form crystals. Never place in the refrigerator or leave in the sun, opt for a dark shelf instead.
