How to make the most of excess herbs

Many people enjoy growing herbs on their windowsills and as a live-in carer you may find that your client enjoys this.

Now, while having fresh herbs is great, being successful at growing them can lead to a glut if they are not used quickly.

There are several different ways to store and use fresh herbs

Use to flavour vegetables

Think about adding fresh herbs to mashed potatoes, dressings, soups or with any vegetables. Basically, you can add herbs to any dish to liven it up.

Make condiments

Pesto is often used in pasta dishes, and this can be made using fresh basil as well as parsley and cilantro. Use them separately or add them together to mix things up.

Flavoured butter

This is an ideal way of getting some more calories into a client who is underweight. Flavoured butters can be used on most vegetables to enhance the taste.

Add to salads

Often a salad can be very plain and boring. Adding some fresh herbs will liven it up and make it more enjoyable. Make a simple dressing by adding fresh herbs to olive oil and use on fresh tomatoes and cucumber.

Flavour fish and meat

Most fish will benefit from the addition of fresh herbs. Herbs such as dill, parsley, sage, and oregano will make any lamb dish taste better.

Final thoughts

Fresh herbs can easily be frozen by adding them to water and making herb ice cubes. These will freeze well and can then be used in soups and casseroles over the following months.

There is no need to let excess herbs go to waste. With a little forethought and planning you can create delicious dishes and use all that you can grow.
